Banko Dhadhato is located within the Gedeb woreda in the Gedeo zone of the SNNPR or Southern Nations, Nationalities, and Peoples Region. It is actually south of the Yirgacheffe woreda. However, the coffee is labeled with the Trademarked Yirgacheffe name because of the similarity in flavor profile. Banko Dhadato is currently comprised of 531 members and covers 602 hectares. This means each farmer collects their Ethiopia Yirgacheffe coffee from just over 1 hectare of land.
It is a member of the YCFCU, or Yirgacheffe Coffee Farmers’ Cooperative Union. There are 28 cooperatives that are part of the union to help them produce higher quality coffee. Members have access to training, processing equipment, transportation services, and warehousing. Moreover, they operate with the goal of sustainably elevating coffee production in the region. YCFCU is a certified Organic and Fair Trade. This ensures product integrity and protecting the livelihoods of the members.
When roasting this coffee, we found the best results with a high application of heat, tapering quickly leading into first crack. The high density will transfer heat to the center of the coffee efficiently. Therefore, the slightly below average moisture indicates the coffee will dry quickly. By roasting this coffee light, we can highlight its vibrant acidity while still developing supporting sweetness. First crack occurred at 8:10 and the roast finished in 10:33 minutes resulting in 22% development.
For espresso, a slightly wider ratio allowed the nuanced flavors to shine. A 20g dose and 43g yield in 28 seconds created a delicate and tea-like espresso. Our shot was 8.21% TDS and the coffee was 18.29% extracted. It was extremely floral, reminiscent of peony, with notes of green apple, kiwi, raspberry and refined sugar sweetness. This would be a great option as a single-origin offering in a cafe for customers looking for a vibrant refreshing coffee. In a blend it would add complexity and brighten an otherwise mild blend.
This coffee is a great representation of the Yirgacheffe flavor profile. It is delicate, floral and fruity. Roasters looking for a light and bright addition to their offering would do well to select this coffee. Please contact a trader at Royal New York for more information.
