After completing the production roast, it was time to see how the coffee performed on the cupping table. We were impressed with the integration of flavors and the crisp, clean acidity in the cup. Noticeable hints of raspberry, peach, and lime with a sweet floral finish and delicate mouthfeel. After cupping, we wanted to see how the roast translated to pour overs by experimenting with variations in dose weight. First, I brewed a V60 dosed to 21 grams. The brew was light, crisp, and clean with balanced acidity. The brew was comparable to the cupping session, showing complex peach and lime notes integrated with a sweet floral finish and delicate mouthfeel. The balance of fruit and floral tones made for a nuanced, expressive cup. I then brewed another V60, this time dosed to 23 grams. The brew was similar to the first V60, offering crisp, clean acidity and complex raspberry and peach notes, but had fewer floral tones. While the brew was cohesive with a silky mouthfeel, we preferred how the first V60 highlighted the coffee’s floral sweetness. Overall, both V60’s were complex, delicate, and expressive with layered sweetness and integration. The region, elevation, and quality of processing each played a unique role in making this coffee exceptional. Brew Notes Peach, Lime, Raspberry, and Floral. Expressive, complex notes of raspberry, peach, and lime transitioning to a sweet floral finish.

This washed lot comes to us from Githembe Coffee Factory in Kenya's Kiambu County, located north of Nairobi. Githembe is one of three coffee mills managed by Thiririka Farmers Cooperative Society (FCS), a well-established cooperative that supports its 1,500 active coffee producers with agronomy training, inputs, and centralized processing. Each of these smallholder farmers cultivates 200 to 300 coffee trees on about 1 hectare of land that sits between 1,600 to 1,800masl.
To produce this lot, local farmers handpick ripe cherries and deliver them to Githembe on the same day. The mill then prepares the lot for depulping, fermentation, and sorting through washing channels. Once the washing is complete, the coffee sun dries on raised beds before export.
Coffees from Kenya are vibrant, complex, and offer some of the most unique flavor profiles: from blackberry and currant to tomato.
